What is Denver Steak?
That’s a great question and I would love to tell you about it!
Denver steak is without a doubt, one of the most underated steaks around. I get people who come into the Meat Market all the time who have never even heard of it!
It’s recently been growing in popularity though because of it’s intensely beefy flavor and tenderness.
The Denver Steak is cut from beneath the shoulder blade and is part of a muscle that is not used often, making it one of the most tender of the beef chuck.
Here’s the thing- It takes an experieced butcher to be able to butcher the steak from the blade. That’s why Hyde Farms is one of the only places around where you’ll find one!
More to Know About Denver
- Boneless; usually between 4 and 12 ounces
- Somewhat rectangular shape
- Cut against the grain for maximum tenderness
- Grill, Broil, or Pan fry/sear on high heat
- Best when rare or medium rare
- Can be eaten alone as steak or used as an ingredient in recipes such as Beef Stroganoff or Carne Asada Tacos
- Tastes a bit like a cross between New York Strip and Ribeye
